Cornish Strawberries with Dark Belgian Chocolate

One of the best flavour combinations if you ask me ... sweet, juicy Cornish strawberries and decadently dark Belgian chocolate. A match made in heaven! When strawberries are in season you can't beat their beautiful freshness and deep flavour. We are lucky here in Cornwall that we produce the best home-grown strawberries. They are fabulous by themselves, dipped in a little caster sugar (as we used to have them in my childhood) or dripping in melted chocolate. As I have mentioned before (in my Chocolate Ganache post) always use a good quality chocolate and make sure it is a minimum of 54% cocoa solids. You can, of course, also dip them in milk or white chocolate too!

Cornish Strawberry & Belgian Chocolate Recipe

A very simple recipe and quick to make!


Ingredients:

1 x punnet strawberries


Method:

  1. Wash the strawberries and pat dry with kitchen roll.

  2. Line a baking tray or plate with baking parchment.

  3. Melt the chocolate in a glass bowl over a pan of simmering water or in the microwave in a microwavable bowl.

  4. Holding the green tips, dip your strawberries in the melted chocolate and swirl in a circle to coat evenly.

  5. Place on the tray or plate and leave to set.



Notes: if using a microwave, do it in short bursts as you may need to give the chocolate a stir. You can set them in the fridge but the chocolate may lose its sheen so I prefer to leave them to set at room temperature.
